Summary:

Bombarded by free radicals, how does the body protect itself from oxidative stress and disease? Free radicals are normal byproducts of our metabolism and are even important for several essential body functions. Yet exposure to toxic chemicals and environmental pollution can increase their numbers beyond what our bodies can handle. Too many free radicals cause oxidative damage that destroys our cell membranes and our DNA. They cause cancer, heart disease, inflammatory disorders, and other chronic medical conditions. Healthful eating patterns provide antioxidants in the form of vitamin C, vitamin E, beta-carotene, various phytochemicals, and selenium. Learn the latest research on the consequences of free-radical formation, the role of specific antioxidants in disease prevention, the foods rich in antioxidants, and the latest expert opinion on using dietary supplements to fight the effects of free radicals and support good health.

Objectives:

The goal of this continuing education program is to provide dietitians with information on vitamins and other nutrients that function as antioxidants and their roles in preventing disease. After studying the material presented here, you will be able to:
  • Define free radicals, oxidation, and antioxidants, and explain how they affect the body
  • Discuss the different antioxidants, their mechanisms of action, and possible health benefits
  • Illustrate to patients the potential role of vitamins A, C, E, selenium, and specific phytochemicals in the prevention or treatment of medical conditions
